Is there a way in AppInventor to utilize taking a picture without using the whole screen as a viewer? I am interested in taking a picture, with the camera view being a smaller square of the screen, and then storing the picture in a different directory than the Gallery. I am very new to AppInventor, so any suggestions would be very helpful.

The Camera component invokes the built-in camera appwhich means the entire screen.

It also contains AfterPicture which gives you the path to the picture that was taken. Given that path and using Canvas component, you can set that picture as canvas background and then do Canvas.SaveAs to save the image into a new location.
