I created several apps using a previous Google e-mail address. The e-mail address, however, has since been deleted. Is there any way for me to still log in with that account and retrieve my apps?
No, I don't think that would be possible as I'm pretty sure Google will verify your address before allowing access... You can try but it's unlikely.
